When you want to diversify your usual menu, seasonal vegetables come to the rescue. In the fall it is, of course, pumpkin: candied, marbled, nutmeg, walnut – there are a lot of varieties. There are no less delicious combinations. Baked pumpkin can be served with greens in the form of a salad, with different types of pickled or soft cheese – as an exquisite appetizer, make toast with it, or prepare a dessert. This product is truly versatile. We offer you a simple recipe for cooking pumpkin in the oven. It will turn out very tasty!
Recipe
Ingredients:
- pumpkin – 0.5 kg
- olive oil – 2 tbsp. l.
- salt – 2 pinches
- ground black pepper – 1 pinch
- dried oregano – 1 pinch
Cooking method:
- Rinse the pumpkin and dry it with a paper towel. Remove peel and seeds. Cut into long pieces 1.5–2 cm thick.
- Line a baking tray with baking paper. Lay out the pumpkin slices.
- Top with salt, pepper, and dried oregano. Drizzle with olive oil. You don’t need to pour a lot of oil; it should only lightly coat the pieces.
- Place the baking sheet in an oven preheated to 200°C. Roast the squash for 20-30 minutes until soft and golden brown. You can check readiness using a wooden skewer.
On a note
- Instead of dried oregano, use an Italian herb mixture.
- Baked pumpkin can be pureed and added to baked goods, pancake batter, and various desserts.
- Baked pumpkin makes a very tasty puree soup.
- Pumpkin slices can be served on toast. To do this, cut the bread and toast it on a grill pan or in a toaster. Spread with cream or cottage cheese and place pumpkin on top.
- Place your favorite salad greens, baked pumpkin, and feta cheese on a plate, and drizzle with balsamic cream – a delicious and healthy salad is ready!
- Sweet lovers can replace salt and pepper with ground cinnamon, cardamom, cloves, and star anise, and also add honey. Top the squash with chopped nuts and blue or goat cheese.
